Healthy Snacks for Flying

Good morning, travelers!  I’m coming to you from sunny and humid Charlotte, North Carolina this morning while Nate and I are spending an extended weekend visiting family. We have been traveling the past two weekends and I always struggle with finding healthy options for snacking at the airport and in the air.  And I’m sure I am not alone in feeling this way!  So I’m going to be bright and brief as I bring to you …     Before we jump into the actual options that you will find at the airport, I must say that the only way to truly guarantee you’ll know... read more

Almond, Walnut & Goji Berry Granola Bars

Let’s be honest here, granola bars have the potential to be pretty boring.  Especially when one is trying to make “healthy” granola bars. Buuttttt….. Almonds. Walnuts. Goji berries.  Hemp hearts.  Dark chocolate.  Sugar free.  Grain free. MMMMmmmmmmmmm     I am particularly stoked about these granola bars because they took many, MANY attempts to reach this …     And here’s why … These granola bars feature a new sweetener!  My typical go-tos are honey or maple syrup, right?  Well, these sweeteners still contain fructose, which... read more

Totally Awesome Granola

Imagine, if you will, a hotel breakfast.  Imagine that it is better than your average hotel breakfast.   Imagine that right along with the eggs, breakfast meats, cereals and toasts there are in-house, freshly baked muffins and breads and THE. BEST. GRANOLA. EVER. Yes, granola. This was my reality just a mere 3 weeks ago.  It was my spring break at school.  Nate and I, along with our friend Dan, traveled to Banff, Canada for some Canadian Rocky Mountain skiing.  None of us had ever been to Banff and, oh my, did this little town far exceed any of our expectations! First of all ….... read more

Almond & Coconut Power Balls

You know that moment in the late morning/early afternoon/pre-workout/post-workout when you are ruthlessly scavenging for something to hold you over to the next meal?  We’ve all been there, weeding through boxes of crackers and bags of chips or filling that 3rd cup of coffee just to get a bit of energy.  And then what happens?  One sleeve of crackers and a block of cheese later you’ve ruined your dinner … your mom would be so upset. 😉 But fear not, my friends!  These balls/bits/bites (call them what you like) pack a serious energy punch in their tiny, adorably... read more

Oven Roasted Chickpeas

So as you may know, I’ve got a day job.  I am a teacher … at a school that, like so many these days, is nut and seed free.  That’s all well and good until — snack time. I am the type of person that needs a snack snacks throughout the day.  Annnd … as I’m sure you can guess, I prefer choosing a snack that is not only delicious but filling and nutritious, too.  This can be hard when you are surrounded by sweet and salty processed carbs! So what’s my go-to snack?  Nuts and nearly anything nut-related … almonds trail mix peanut butter almond butter... read more

Crunchy Nut Granola

Let’s talk granola.  Usually seen as a fun add-in to your favorite yogurt, right?  Well that stops today, my friends … with this granola!  No longer a supporting character for your morning breakfast routine.  This granola is so crunchy, filled with little flavor clusters of nuts, seeds and rice cereal and incredibly snackable — you’re guaranteed to be sneaking handfuls ALL. DAY. LONG. I have made a few granolas in my day and have always included oats in the recipe.  To be quite honest with you, I never thought of not including oats in the recipe.  You know as... read more

Homemade Applesauce

I don’t know about you but I had a jam-packed weekend.  We had friends visiting from Ohio and I was helping at a dance show both Friday and Saturday night.  And Sunday I poured huge amounts of energy into cheering on/yelling at the Panthers/Texans game.  (Yes, I’m from Ohio but my team is the Carolina Panthers … a story for another day.) So, when Nate and I got home Sunday afternoon the last thing I wanted to do was spend a lot of time in a hot kitchen.  Luckily, I got a great recipe idea from my friend, Laura.  🙂  You see, we’re going to visit them in Ohio in... read more

Sweet & Spicy Trail Mix

This Labor Day Weekend, Nate and I were fortunate enough to spend the weekend with friends at Santa Rosa Beach, Florida.  We debated taking this trip knowing it would be super quick and travel-heavy but in an effort to ‘say yes’ more often, we booked our flights and never looked back.     And it was totally worth it!  There was golfing, bocce, great food, frisbee, crystal clear water, fish, huge crabs and lots of laughter.  What better way to spend the ‘last weekend’ of summer?     So, as was previously stated, this was a very travel-heavy... read more
